So last summer, we took a road trip through the southern USA - all the way to Florida. One of our "Must do" was try Alabama White BBQ Sauce. It didn't disappoint! It's a very different BBQ sauce and seems to go best with chicken or pork. Although, we just had it on our beef ribs and it was delicious!
As with many old recipes, there are many variations out there. Differences include types of mustard used, white sugar or brown sugar, horseradish or not. Here is how we made ours and really loved it!

We made up a delicious batch of beef ribs last night from our grass-raised beef. When enjoying grass fed beef, you may find it's tougher than your grocery store beef. That is because grass fed beef is leaner - no grains used so the cattle don't get as fat which means less marbling. To help tenderize your meat, it's a good idea to marinate it overnight with some type of sauce that includes either an acid (like vinegar, lemon juice) or an enzyme (like mango, papaya, or kiwi fruit).
We put the ribs in the marinade overnight (at least 12 hours). Then we baked the ribs in the oven for 5 hours at 225. Eric finished the ribs on the grill to give them the crispy outside. It worked out deliciously!!

A good southern favorite is making KoolAid Pickles. It's a great snack item for anytime and anyone. We had a guest "chef" help us make our first batch of KoolAid Pickles on our cooking show.
From what we learned, you can do this with any type or slice of pickle. You can mix up the KoolAid flavors. It's all very versatile to make it how you like. The hardest part of this recipe is letting the pickles sit for 2 weeks before enjoying them!

We are coming to the end of beet season but we still have a delicious selection of red or golden beets. The golden beets are sweeter than the red ones. They both have delicious flavor. Many people say "they taste like dirt" but not our beets. They are yummy! Here are three ways to try out beets, red or golden.
Beet Fries
I don't know why I never thought of this but they are excellent cooked in the oven. Peel and cut the beets in half and then cut in 1/2" strips. (wear gloves to keep from staining your fingers). Then toss in bowl with 1 Tablespoon oil, salt and pepper to coat the beets. Put parchment or foil down on your cookie sheet. Then spread out the beets and bake for 20-30 minutes at 425 or until tender.
Grilled Beets
We are enjoying the weather and are grilling like crazy right now. Why not throw the beets on the grill?
Wash and peel beets and then dice. Toss the beets in a bowl with 1 Tablespoon oil, 2 teaspoons Italian seasonings, salt and pepper. Place the beets on foil and create a "pocket" with the foil. Place the packet on the grill for 35-50 minutes (depending on size of beets and heat of grill). They are done when tender. To serve, add some crumbled feta on top.

Spinach is a very nutritious and versatile vegetable to add to many dishes. It can be cooked on it's own or "hidden" in a soup or main dish.
Eating spinach may benefit eye health, reduce oxidative stress, help prevent cancer and reduce blood pressure levels.
It is high in Vitamin A, C & K1. It also has plenty of Folic Acid, Iron and Calcium. Add some more to your meals today!!

We are harvesting winter vegetables right now. The broccoli and cauliflower are simply delicious this time of year. Here's a great salad that you can make for the whole family to enjoy. Feel free to modify the type of cheese, skip the onions, or however your family enjoys it.

This is a great alternative recipe for people avoiding potatoes in their diet. The recipe is simple and can be improvised on to include any items you like - bacon, chives, cheese, butter, sour cream, etc. We did make this recipe as is. It was tasty and light. We would make it again and add butter.
